GASTRO trend: Ljubičasta je nova zelena!

Uglavnom se kaže da je sigurno zdrava hrana koja je zelena, ali za 2017. godinu postoji novi gastro trend koji u prvi plan stavlja – ljubičastu hranu!

Upravo tako je ljubičasta postala najpoželjnija boja hrane, barem sudeći prema različitim postovima na Instagramu – gde je poznato da se nalaze fotografije samo najbolje ili barem najfotogeničnije hrane!

Međutim, osim što lepo izgleda na Instagramu, ljubičasta hrana je i zdrava – ukoliko se sastoji samo od prirodnih namirnica, bez dodataka različitih veštačkih boja kako bi se dobila željena nijansa!

Stručnjaci su dokazali i da je upravo tamnije povrće i voće bogatije antioksidansima i da je kao takvo mnogo bolje za naše zdravlje, pa su tako ljubičasti kupus, krompir i špargla mnogo zdraviji od svojih „običnih“ srodnika.

Roasted purple cauliflower with a parsley-caper-currant vinaigrette & toasted pine nuts. I'm also making roasted Adirondack blue potatoes tonight so it's going to be quite the monochromatic meal ? ? The vinaigrette is inspired by a sauce i had with cauli puree at a restaurant a few years ago, and I've been making it ever since; the briny-herby-lemony-subtly sweet dressing is a perfect match for the earthy cauliflower. Will post the vinaigrette recipe below. Okay back into my purple haze I go ???✨ . For the vinaigrette, soak 1 tbsp dried currants in 3 tbsp lemon juice until softened, about 5 mins. Scrape into a small food processor and add 1/3 cup parsley leaves, 2 tsp capers, 3 tbsp olive oil, pinch of crushed red chili. Blend until parsley, currants & capers are broken down but still a bit chunky.
